Fall fig salad

I made this for lunch yesterday. It only takes 5 minutes…

Toss the spinach with a bit of olive oil and balsamic vinegar. Sprinkle with pine nuts and Super Sweet 100 garden tomatoes. Warm a skillet on low and add 3 or 4 sliced dried figs and barely enough water to cover the bottom of the pan. Steam with the cover until just warm and then scatter small chunks of creamy white goat cheese (I used a feta) over the tops. Turn off the heat and cover until cheese begins to melt. Turn pan contents out over the spinach and serve.
