The munchkins came running in from outside with whoops of joy. They’d been informed that soup was on the menu. “Just what I wanted!”
There are distinct soup preferences in this house. Some want it red and tomatoey, others want it dark and beefy, and lastly, some want it creamily potatoed. This bowl seemed to suit them all tonight though. I made the broth from a Cooks Illustrated recipe and strained all the flavoring vegetables out. Then I added the meat back in, and sautéed fresh vegetables for taste. The recipe originally called for pearl onions and mushrooms, but I was out of both. (Having waited too long and letting the mushrooms spoil on the counter!) So I used a larger onion, asparagus, and carrots instead. They actually worked very well with the broth. Perfect for chilly March day!
